Shawarma-Spiced Green Lentils

I love shawarma spices. They are warm and rich and make the whole dish. This meal is super easy to make and the spices create a sophisticated, distinctly flavored dish. Great as a side dish or as a main course over brown rice.

 

Ingredients:

2 cups leeks, sliced

3 teaspoons olive oil

3 teaspoons shawarma spice mix

2 cups green lentils, soaked overnight and drained

4 cups water

Salt

Pepper

 

Directions:

In a nonstick saucepan add olive oil and leeks - saute for a few minutes, then add the shawarma spice mix and toast for a couple minutes. Then add the lentils, salt and pepper, sauté for few more minutes and add the water. Bring to a boil and then lower simmer for about 30-40 minutes, until the lentils are tender and the sauce has thickened. Serve over rice.
