Vegan Butter beans, quinoa and veggie stew

Great comfort food loaded with iron and anti oxidants! What a wonderful meal for a cold day!

This dish is so easy to make and so good! The butter beans are delicious and and with the quinoa and the veggies, it creates a lovely meal! If you have a large croud to feed, this is definitely a good meal option. I served it with brown rice.

 

 

Ingredients:

8 chopped celery stalk - about 2 cups

5 chopped green onions

1 teaspoon olive oil

2 cups chopped kale

1 shredded parsley root / parsnip

2 cups fresh chopped spinach

1 can organic tomato sauce 15oz / 425 gr

2 teaspoon cumin

2 teaspoon turmeric

2 teaspoon sweet paprika

4 cups white butter beans that have beans soaked for the night

1 teaspoon agave

1/2 cup tricolor quinoa

1 tablespoon sweet chili sauce

7-8 cups water

 

Directions:

In a cast iron wide pot, add olive oil, celery, green onions, sauté for few minutes then add the shredded parsnip, kale, spinach, cumin, turmeric, sweet paprika , let the spices combine and when you start smelling the aroma, add tomato sauce, beans, agave, quinoa, sweet chili sauce and water.

Bring to a boil and then lower to simmer, until the beans are soft and the sauce become nice and thick.

Enjoy with a good rustic bread or with brown rice.
