Quinoa Mushroom Pilaf

Quinoa Pilaf is a quick meal that you can prepare in no time, almost:) Great for the winter time.

If you do meal prep and have the quinoa ready in the fridge, then it’s really going to be ready quickly.

I find myself making this dish a lot, since it’s so delicious, satisfying, healthy, gluten free and easy to make.

Ingredients:

For the Quinoa:

1 cup quinoa

1 1/2 cups water

For the Mushrooms:

1-2 tablespoons olive oil

2 medium onions, chopped

2-3 cloves of garlic, minced

1 tablespoon shawarma spice mix

1 teaspoon mushroom umami

4-5 cups of mushrooms, chopped (I used mini portobello, but you can use any type you like)

Salt

Pepper

1 cup frozen peas,(optional) thawed

Directions:

Cook the quinoa according to the package instructions. set aside.

Take a wide nonstick pan and add olive oil, onions, salt and pepper, sauté on medium heat for a couple of minutes, then add garlic, shawarma spice mix and mushroom umami spice, sauté for a couple more minutes, then add the mushrooms, mix and sauté until the mushrooms release their liquids and shrink in size. Add the cooked quinoa and lower the heat. Sauté and mix well until all the flavors combine. Check if you need to add more spice / salt . Now add the peas, mix again and serve.
