Apple Kale Salad
It was a few years ago when I was first introduced to kale, and I fell in love with it right away. I tried to combine it in so many of my dishes, however, my favorite one is this salad.
There is something very complementary in the ingredients of this salad. I often serve this salad at dinners and most of the people that adamantly say they don't like kale, fall in love with this recipe of mine. Kale needs sweetness, and the balsamic here works like magic. it is perfectly balanced and the dressing softens the kale, which make it easier to chew. Also, another great ingredient is the walnuts which adds a nice crunch and texture. The apple and purple cabbage not only give it a great color, but they also add a fabulous flavor.
This salad recipe is my go-to when I feel I need to detoxify my body, especially after eating too much out or drinking too much wine :) It helps boost digestion due to a high amount of fiber.

My preferred kale is the organic green curly kale.
I usually buy it in a bunch, remove the stem, wash it carefully and dry it. Then I chop it thinly, so its easier to eat since kale tends to be very thick.
Apple Kale Salad
4 cups green curly kale, chopped
1 cup purple cabbage, chopped
1 apple, chopped
4 celery stalks, thinly chopped
1/4 cup walnuts, chopped
1 tablespoon olive oil
juice of 1 lemon
1 tablespoon maple syrup
1 tablespoon apple cider vinegar
Mix all the dressings ingredients in a bowl, using a whisk.
Add all the salad ingredients and mix.
Serve. This salad will keep great even the next day, it gets better and better...no joke!
