Chanukah Shaped Cookies, Vegan & Gluten Free

Celebrating the miracle of lights tonight is quite a big thing at our house! And the holiday will not be complete without these addictive cookies! They are loaded with good ingredients such as almond meal, maple syrup, coconut oil and oats. The cookies become perfectly crunchy and delicious. So if You eat cookies, You better eat these ones.

You can make these cookies shaped with your favorite cookie cutters or simply round. The shape won't change the flavor, I assure you:) 

Another good thing about the cookies is that they are gluten free too, which make them a lot easier to digest, they contain no raw sugar, just natural pure maple syrup as a sweetener. Did I say guilt free already? 

Try for yourself and surprise your loved ones! It sure will, give an answer to your sweet tooth.

Chanukah Shaped Cookies, Vegan & Gluten Free


Yield: 20 cookies

1/4 cup pure maple syrup

1/4 cup coconut oil

1  1/2 cups almond meal

3/4 cup gluten free oat flour

1/4 cup arrowroot

1 teaspoon vanilla extract

pinch of salt


Heat oven to 375F

Take a baking sheet and line with a parchment paper.

Take a mixing bowl and add maple syrup and coconut oil, mix well with a whisk. To the same bowl add almond meal, gluten free oat flour, arrowroot, vanilla extract and salt. mix well with your hands or use a hand mixer.

Dust your working station and rolling pin with flour, roll the dough and cut out cookies with your favorite cookie cutter shape. Place on the baking sheet and bake in the oven for about 10-15 minutes until the edges become golden brown. Let cool and store in an air tight container.
